Atheist challenge: We think the New Testament was authored 100+ years after Jesus died, so its authors were not eyewitnesses.
Christian rebuttal: Though scholars disagree on the precise dates in which the gospels were written due to their presuppositions, we have good evidence to suggest that the vast majority of the New Testament was written prior to the destruction of Jerusalem in 70 A.D. This assertion is based on the fact that the destruction of Jerusalem, which was a major event on the same level as a great war, is not mentioned in the New Testament.
